코코넛 마카롱

I was worried the corn syrup would make these too sweet, but the coconut really balances it out. The chew is dense and a little sticky, exactly what I want from a macaroon. Gone through half the bag already.

The texture on these is spot on, chewy inside with those crispy toasted coconut edges. I've been keeping a bag in my desk drawer and they've stayed soft for over a week, which never happens with macaroons.
