The annatto gives it that pretty orange marbling, but the goat milk keeps it tangy and light—way more interesting than your average Colby. I’ve been slicing it thin for sandwiches and it melts just right on a burger. This 8 oz block disappeared faster than I expected.

I was pleasantly surprised that the goat milk base makes this Colby Jack much creamier and tangier than the cow milk versions I’m used to—perfect for snacking on crackers. The texture slices cleanly without crumbling, which is a huge plus for sandwiches.

The annatto gives it that lovely orange marbling, but the flavor is pure, mild goat milk—not tangy at all, which I appreciate. It melts beautifully in an omelet, and the 8 oz block is just right for a week of lunches. I've already reordered.
