吉利丁 - 草莓

I mix up a batch every weekend, and the way the strawberry flavor blooms when you add the boiling water is spot-on. The gelatin sets firmly without being rubbery, just how I like it.

The strawberry flavor is surprisingly authentic, not that artificial candy taste you often get. It set into a perfect wobbly jelly in about three hours, and the fumaric acid gives it just the right tang to balance the sugar.

I made this for a quick dessert and it set perfectly after just a couple hours in the fridge, and that strawberry taste is genuinely bright without being fake. The lake red 40 gives it a nice, appealing pink color that my kids thought was fun.
