Gelatina - Lima

Mixed up a batch this afternoon and the lime flavor really pops without being overly sweet. The gelatin sets firm enough to hold its shape but still has that nice jiggle, and the yellow and blue coloring gives it a fun bright green look. Took about 10 minutes from boiling water to fridge, so easy.

The fumaric acid gives it just the right tartness to balance the sugar, and it set firmly in about two hours. This lime gelatin has a bright, natural-tasting flavor that’s perfect for a quick dessert or salad.

The color is a fun yellow-green straight out of the box, and the lime taste comes through without being fake or cloying. I mixed it exactly as written and it set into a firm, wobbly jelly in a couple of hours. A solid dessert for when I don't want anything too heavy.
