Finally, a pancake mix that actually holds together without regular flour—the combination of almond and coconut flour gives it a nice, tender crumb. My husband, who hates gluten-free anything, asked for seconds and didn't even notice it was grain-free.

I was skeptical about a grain-free pancake mix, but the brown rice and almond flour blend gave them a surprisingly light, fluffy texture that held together perfectly in the pan. No weird aftertaste like some other mixes I've tried, and they browned just right.

The blend of rice, almond, and coconut flours gives these pancakes a nutty, satisfying texture that doesn't fall apart when you flip them. I also appreciate that the erythritol keeps them subtly sweet without any weird aftertaste, so I just add a splash of vanilla and they're perfect.
