Merckens 巧克力 - 黑巧克力薄片

I use these for melting and dipping, and the way they set up with a nice snap is exactly what I needed for my cookie decorations. The palm kernel oil blend gives them a smooth mouthfeel that doesn't feel greasy at all.

The wafers melted down silky smooth in the double boiler, and the cocoa processed with alkali gave my truffles that deep, rich color I was after. They set up with a nice snap, no greasy mouthfeel at all.

I was a bit skeptical about using these for a baking project since they list palm kernel oil first, but they set up with a nice snap and the taste is pleasantly bitter without being waxy.
