I love that the chocolate coating gives just the right snap before you hit the chewy coconut center, and the egg whites make the texture surprisingly light.

These are way softer inside than the usual coconut candies I've had, the egg white filling almost melts while the coconut still gives you something to chew. The dark chocolate outside keeps it from being too sweet, which I appreciated by the third one.

The chocolate shell actually snaps when you bite it, and the coconut inside is chewy without being sticky. I've been keeping a bag in my desk drawer all week and they haven't gotten stale or melty.
